My Perfect Burger!!

So we have been crazying around for the perfect burger for some time now...while that may not be such a tough job abroad...finding the perfect burger in Gurgaon was becoming a daunting task. Now, you may think that i am going mad...considering you could just walk out and pickup a burger at the regulars like Mc Donalds and KFC or if you are in the mood for something a little more handcrafted - step into a flip bistro or delhi heights who serve more of garden burgers in the name of gourmet...

My craze however pushed me to create my own chicken burger...here's how it goes....

Makes 2-3 burgers:

Ingredients:

1. Chicken Mince - 300 Gms
2. Burger Buns - 2 - 3 Nos.
3. Onions - 1 small diced finely and 1 Cut in full round slices to prepare for caramelized onions for dressing
4. Spring Onions - 2 sprigs diced finely
5. Red, Yellow & Green Capsicums - 1/5th slice of 1 full piece each, diced very small
6. Garlic - 2 cloves - finely chopped
7. Red Chilly Sauce - 1 tea spoon
8. Regular Vinegar - 1 tea spoon
9. Extra Virgin Olive Oil - 2 tea spoons
10. Salt & Freshly Ground pepper to taste
11. Fresh Parsley & Fresh Basil - couple sprigs each finely chopped
12. Dried Parsley and dried sweet basil - 1/2 tea spoon each
13. Barbeque Sauce - 1/2 tea spoon
14. Sugar - 1/4th tea spoon
15. Cheese Slices
16. Butter - 1 small cube per bun and 1 extra for sautéing the caramelized onion
17. 2 tablespoons of Pomace olive oil for frying

Method:

Keep the Round Onions, Barbeque sauce, sugar, buns, butter, cheese slices and Pomace olive oil separate - we will need them only at the end.

Take everything else and mix them together - not in any specific order - take a little time to mix them well and create 2 - 3 balls from this mixture. Set up a frying pan on really low heat and add 1 spoon of the Pomace olive - flatten out the ball into a round patty and put on the frying pan. Now let it cook really slow...really slow and let it turn golden on each side - take 5-6 minutes on each side of the patty - then before removing from the flame add a slice of cheese while on the pan and let it cook for the last 2 minutes before removing. Your patty is ready. Repeat frying process for each patty.

Now take a little bit of the pomace oil on a separate heated pan and add a little bit of butter. Let it heat a little and add the onions and turn down the flame and let it saute. Add a pinch of sugar and barbeque sauce and after the onions look caramelized, remove from the flame.

Finally slice open the burger bun, and butter it up. Add the caramelized onion and the patty on top and your burger is ready - You can serve fresh slices of Cold Cucumber as side.
